A data logger answers a question that a control system does not: what happened over weeks or months, at a resolution fine enough to show the trend. Because it runs independently of the control system it also survives it, which is why loggers are the usual instrument for proving a process was within specification after the fact.
Channel count and isolation decide most applications. An unisolated logger is cheaper and perfectly adequate for a set of thermocouples referenced to the same ground, but the moment a channel connects to a different circuit, or a thermocouple touches a live surface, isolation stops being optional.

How long can it record?
It depends on channel count and interval, but the arithmetic is simple: 16 channels at one minute intervals fills an 8 GB card in a matter of years. The constraint in practice is usually how often someone downloads the data.
Do I need isolated inputs?
If every channel shares the same reference and none touches a live conductor, no. If channels come from different circuits, or a thermocouple is welded to a live surface, isolation prevents a ground loop that will corrupt every reading on the instrument.
